5 Green Foods to Celebrate St. Patrick’s Day

Happy St. Patrick’s Day! Today, we’ve got something even better than a pot of gold at the end of the rainbow. Read on for five fun recipes—with a zany, green twist!

1. Vegan Avocado-Bun Burger

Sometimes, it is easy being green—a.k.a., going meatless. You can fashion a brown lentil patty or, if you really want to lean into the holiday spirit, a veggie patty made with green peas and grated Parmesan. Swap out the bread buns for one halved-and-peeled avocado, but to avoid a mushy mess, ensure that your fruit is ripe and firm and that you use lettuce to anchor the slices in place.

2. Pesto Spaghetti with Zucchini

Despite it being an Italian offering, we’re giving the green light to a pesto pasta dish with stringy zucchini for the Irish holiday. You can skimp on the spaghetti for a low-carb rendition—just put more zucchini through a spiral vegetable slicer. Did you know you can make your own pesto with fresh basil, toasted pine nuts, clove garlic, grated Parmesan, lemon juice, extra-virgin olive oil and salt and pepper?

3. Broccoli-Crust Pizza

Your taste buds will be doing the Irish jig as soon as you take one bite of this pizza. Customize it to your liking with green and non-green toppings, but whatever you do, follow this recipe for baking a broccoli-based pie crust. Brimming with flavor, this crust’s ingredient list also includes Italian breadcrumbs, red pepper flakes and dried oregano.

4. Creamy Broccoli Cheddar Soup

For a lighter, tangier taste, we recommend adding a couple of cups of Greek yogurt instead of half-and-half creamer when whipping up this soup. When it’s brought to a boil, cut the heat and toss in some broccoli florets until the soup catches a light green color. Then, purée in a blender! Our favorite part? Whisking in some grated white cheddar before serving.

5. Matcha Iced Green Tea

Wash down your St. Patrick’s Day feast with a refreshing matcha iced tea. Blend some well-mixed matcha powder and hot water with some crushed ice, cold water and fresh mint. Drain the contents of your blender through a sieve into a pitcher and add maple syrup and fresh lime juice. Lastly, serve with a mint-leaf garnish and a few slices of lime!
